Uni-Pak Mackerel Sandwich Recipe + Giveaway (Closed) + Winner


It's a fast-paced world we're living in and keeping up with everything that's happening around us can be daunting at times. We're so busy that there're times when we even forget to eat and would just remember that we've skipped a meal when we're already having hunger pangs. Things like this shouldn't happen because it's just wrong to compromise our health over matters that are less important. As they say "health is wealth". We can work and earn as much money as we want only if we're strong and healthy. Besides, we can always cook meals that're both healthy and easy to prepare. 


I used to eat pork but stopped because I'd get dizzy even if it's just a small portion. Hindi basta nakasanayan the best na yan, as the saying goes. Nowadays, I only eat veggies, chicken, and seafoods. My go-to food is usually Uni-Pak products. That's why I was so happy when Uni-Pak sent me cans of Uni-Pak Mackerel in Natural Oil (along with a T-shirt and mug). I tell my friends, basta mackerel dapat tatak Uni-Pak. Because of Uni-Pak, I can cook hearty meals in no time. Plus, mackerel is one of the best sources of iron, selenium, calcium, protein, minerals, Omega-3 fatty acids, and Vitamins B and D. It's said to help in fighting dementia, breast, prostate, renal, and colon cancers, and cardiovascular diseases. Mackerel strengthens the immune system and supports the functions of organs that have been weakened by sickness.

Having said that, I'd like to share a simple recipe that everyone, especially people on the go, would certainly appreciate. 


Uni-Pak Mackerel Sandwich

Ingredients:

1 can of 425 g Uni-Pak Mackerel in Natural Oil drained and flaked
2 tablespoons red onions, minced
1 tablespoon lemon or calamansi juice
4 tablespoons mayonnaise
8 slices white or wheat bread
salt, sugar, and pepper to taste


Procedure:

1.) Mix the mackerel, minced onion, mayonnaise, lemon juice, salt, sugar, and pepper.
2.) Spread the mackerel mixture on slices of bread.
3.) Close the sandwiches.

Foodpanda Food Photography Secrets Revealed

Nowadays, everyone loves taking pictures of their food, whether it’s fiddling with filters to enhance images, or using special lenses for professional results - before actually digging in and enjoying a meal. But according to foodpanda, there are several even simpler tips to ensure masterful food photos without having to buy professional gadgets!

  1. What is considered to be most important when taking food photos?
It’s pretty difficult to pinpoint ‘the most important’ aspect to consider when taking photos of food, because a good photo depends on many factors, from lighting and technique to having an aesthetic eye, and of course the food itself. However, one of the most important things to consider is authenticity and to stay true to your individual style. Once you have your own style, you should stick to it, as it will serve as an expression of your personality.

  1. Do you need a professional camera to achieve the above or can you take cool pictures with a smartphone?
You can certainly achieve all of this with your smartphone! Having a professional camera has great benefits, but you are definitely not limited with a smartphone. If you know what factors to consider when taking pictures, you are guaranteed professional-looking images. You can also always edit pictures with the help of white balance settings or playing with one of the countless photography apps.

  1. Do ingredients play a role in pictures?
That’s a pretty good question, because it doesn’t cross most people’s minds, but the contents of the dish do play a role in photos. There are many dishes that don’t photograph well, so you need to consider adding fresh ingredients that would enhance the picture. The next time you order food that is not photogenic, consider using fresh ingredients with great colours available in your kitchen. Feel free to arrange them nicely and test the angle.

  1. Should you use raw ingredients around the dish in photos. What is the benefit?
Raw ingredients make for great extra props, especially with foods that don’t photograph well. As mentioned, the addition of raw ingredients make the photo look fresh, while bright colours would make your photos pop.

  1. If a dish looks crowded, will the picture be less appealing?
Yes, simplicity is key. The plate should be nicely arranged and not in an overwhelming way. To help you envision what that means, think about how you can keep the outer white space of the plate clear. I would suggest to just use a small portion of your meal to take the photo, and then later on enjoy it in its entirety!

  1. What about including hands in the photo? Is that a no-go?
Adding a human element to your pictures actually makes for a good picture, as it shows viewers that you are taking the picture from your own point of view and creates a sense of presence. You could take a picture holding cutlery, or you could simply lay your hand on the side. Holding ingredients in hand (rosemary, cranberry etc.) is a great idea. Just test the angles and you’re sure to take a perfect shot!

  1. What are the best angles to use when taking food pictures?
Angles are the visual language connecting you and your audience, and my two favourite are the top angle and the front angle. Of course, there a lot of different angles that work, but these are my personal favorite when taking food pictures. 

  1. And is there any necessity for professional gadgets?
If you’re not a professional photographer, it’s not necessary to invest in technical additions. Improvisation couldn’t be easier! Here are some super helpful tips:
     Decorate - use a wooden board to place your food, white baking paper or paper bag as a background, even spread some baking powder around for that extra effect!
     Use a napkin to take out excess oil from some dishes - oily dishes don’t photograph well and it will taste just the same.
     Put your food close to a window. Natural lightning is key to the having best pictures.
     Don’t have a selfie stick to take pictures from a high angle? Stand on a chair!
     Use styrofoam as a substitute for reflectors, they work wonders!
     Set the focus point correctly on the main dish - simply click on the screen of your mobile phone.

  1. Any obvious tips? Golden rules?
It might seem obvious, but it needs to be said that you should always keep the plate clean, especially when shooting close-ups. If there are smudges or imperfections, it would make the food look unappealing. Another tip would be to set up your perfect shot before your meal arrives -- food comes last in the composition process. Lastly, arrangement is a golden rule, as it is the key to a successful picture.


Food photography ultimately amounts to your interaction with your meal. Specific arrangements, differing camera angles, the use of natural lighting, and the human element are just some of the things to consider. This process takes time and postpones the moment of eventually taking that very first bite of a delicious meal. But the anticipation makes this experience all the greater, so take out your camera and enjoy snapping some cool shots using the above tips. Just don’t let that meal get too cold!

How to Throw the Perfect Boodle Fight

Few know that we have the Philippine Military Academy (PMA) to thank for the concept, as the boodle fight originated from the military’s practice of members of the army, regardless of rank, gathering around a long table and eating food spread over banana leaves with their bare hands.

As primal as it sounds (‘boodle’ fight is military jargon for ‘attack the food’ after all), a boodle fight need not be so messy. Just follow these tips to make your boodle fight the talk of your barkada:

1. Have a theme.

Few things are more fun than themed parties, and your boodle fight’s can be reflected in the decorations, activities and, of course, the food! Prepare a lei for each guest, and serve kalua pork for a Hawaiian luau; spice up your guests’ evening with a Mexican fiesta, complete with tacos, enchiladas and margaritas; or go organic and serve only vegetarian delicacies!

2. Come in costume.

Have your guests come as opposing characters, and prepare for a real fight! Heroes and villains, nerds and jocks, #TeamNicki and #TeamTaylor—the possibilities are endless! The Coffee Bean & Tea Leaf's Swirl Rewards Card

I've always enjoyed the ice blended coffee of The Coffee Bean && Tea Leaf more than Starbucks. Even their food tastes better. I particularly like their Guiltless Chocolate Delight, Chef's Tuna, and Sardine and Garlic Linguine. Since I always dine at their Newport Mall branch, I decided to buy a Swirl Rewards Card loyalty and cash card which allows you to earn points to spend right away, load cash to use for future purchases, as well as enjoy free Wifi in all their branches. It only costs P195 which is a steal since it doesn't have any expiration date. 

The good thing about this loyalty card is that you don’t have to build up thousands of points over months or years to get your reward. You can likewise load credit at all The Coffee Bean & Tea Leaf stores. Every P100 you spend using cash or credit card earns you 5 points (every 1 point is equivalent to P1).

Loving J. Co Donuts

My sister brought home two boxes of J. Co Donuts & Coffee over the weekend. This is the first time I've tried these famous donuts and now I can see what the fuss is all about. I often wondered why people patiently lined up to buy them at the mall and now that I've tasted it, I'm definitely gonna do the same. My sister bought the two boxes for just P500+ because it was the soft opening of their branch along UN. 

I liked all the flavors especially the Alcapone, Crunchy Crunchy, and Why Nut. I hope they'll have a delivery service soon since I don't like long queues. They have branches at SM MOA, Megamall, Greenbelt 3, Trinoma, Alabang Town Center, SM City Fairview, Eastwood, Glorietta 2, and Araneta Center.

Delicious Fruity Cheesecake

I'm having one of those moments again. I seldom cook and prepare something in the kitchen that's why whenever I do, it's sort of a big deal for me and everyone around. Since I've been craving for cheesecake for days now and haven't gotten to dropping by The Coffee Bean & Tea Leaf, I've decided to make it myself. It's quite simple and you don't even need an oven.

For the crust:

1 1/2 cups Graham cracker crumbs
1/3 cup melted margarine/butter
1 tbsp brown sugar
1/2 tsp ground cinnamon

For the topping:

2 tbsp sugar
1 tbsp cornstarch, dissolved in 3 tbsp fruit cocktail syrup
1 can (836 g) Del Monte Fiesta Fruit Cocktail, drain well (reserve syrup)

For the filling:

1 1/2 tbsp unflavored gelatin
1/3 cup fruit cocktail syrup
1/2 cup all-purpose cream, chilled
1/4 cup sugar
1 tsp vanilla extract
1 pack (225 g) cream cheese, softened

Instructions:

1.) For the crust, combine ingredients and mix well. Press into 9" pie plate (or spring form pan). Cover and freeze for 30 minutes.

2.) For the topping, heat cornstarch mixture, constantly stirring until just thick. Stir in sugar and Del Monte Fiesta Fruit Cocktail. Set aside.

3.) For the filling, combine gelatin and fruit cocktail syrup. Stir. Heat over low fire until gelatin is dissolved. Add sugar and vanilla. Set aside.

4.) Beat cream cheese until smooth and fluffy. Set aside. Beat cream until if forms soft peaks. Add cream cheese. Continue beating until well blended.

5.) Gradually add gelatin mixture while mixing. Fold in 3/4 of Del Monte Fiesta Fruit Cocktail mixture. Pour over crust. Chill until set. Top with remaining Del Monte Fiesta Fruit Cocktail.

My Sizzlin' Pepper Steak Experience

I was able to spend some bonding time with my nephew last week at the Newport Mall, Resorts World Manila before classes started. I first went to Fab Salon to have a manicure while he played at GameZoo. Then we decided to have our merienda at The Sizzlin' Pepper Steak. The good thing about going to this mall is that it's not too crowded and people are able to enjoy the time spent with their family. There were just a few customers and we were seated in a comfortable corner of the resto. I must say that their menu is quite extensive and I didn't know what to order at first. There were just so many dishes I wanted to try but since I was hungry I decided to go with their bestseller, the Beef Pepper Rice. We also ordered the Sizzlin' Soya Cream Tuna, Classic Carbonara, Chicken Caesar Salad, and Blueberry Cheesecake Ice Cream.

I was kinda surprised at how fast they served our food, which I thought was a big plus. Everything we ordered was delicious especially the Beef Pepper Rice. The service was also good, with everyone smiling and catering to our every whim. The resto was not that big but it's cozy. The prices are a bit steep though and some people might get discouraged. But I thought that it was worth it because I enjoyed the food. I really don't mind paying extra if my palate is fully satisfied. I'll definitely come back at The Sizzlin' Pepper Steak for more of their sizzlin dishes.

Anthony Bourdain Loves Jollibee

Anthony Bourdain, the famous host of Travel Channel's No Reservations has tried Filipino food once again. I saw a Youtube video yesterday of his new CNN show Anthony Bourdain Parts Unknown where he along with Korean chef Roy Choi went to a Jollibee drive thru in Koreatown, Los Angeles, California and ordered Halo-Halo, Spam Sandwich, and Aloha Burger. He loved all the food especially the Halo-Halo which he said is "oddly beautiful" (wish we also have Halo-Halo from Jollibee here). He even took a picture of it:

Dinner via City Delivery

Last night I ordered a Mighty AJ's Beef Burger and Country Fries with Chili con carne and Melted Cheese from Icebergs courtesy of City Delivery. This is only the second time I ordered from City Delivery because their minimum delivery used to be P500. I find that too steep and I think many will agree with me on this. But since they changed it to P300, I'll definitely order more often now. I'm actually looking forward to trying their wide selection of restaurants. I'm tired of ordering from the usual fast food chains, and eating food from well known restaurants in the city right at the comforts of my home is certainly a welcome thought.

For those who don't know what City Delivery is, it's a comprehensive delivery service provider that brings customers their favorite restaurant food. If you're not in a hurry to eat, you can probably stand waiting for 1 hour and 30 minutes for your food to be delivered. It's not advisable to order from them if you're too hungry. Anyhow, City Delivery caters to most major areas within Metro Manila. If you choose a restaurant that's not in your area or city, you'll be charged with a higher minimum fee.

My Pininyahang Manok

When my dad celebrated his birthday last week I cooked something special for him. I do not normally cook at home since I am not very good at it but it is a special occasion so I wanted to make it memorable for him and for all of us. He likes chicken so I made him Pininyahang Manok, a classic Filipino dish that mixes the richness of milk balanced with the sweet and sour kick of Del Monte Pineapple Tidbits. 

Pininyahang Manok

Ingredients:

2 pouches (115 g each) Del Monte Pineapple Tidbits, drained (reserve syrup)
2 tbsp ginger strips
6 cloves garlic, crushed
1 large red onion, sliced
3/4 kg chicken thigh and leg, cut into serving portions
1-2 tbsp patis
1/2 tsp peppercorn
1 pc medium red bell pepper, cut into cubes
1 can (154 ml) evaporated milk or 2/3 cup coconut milk

Directions:

1.)  Saute ginger, garlic, and onion in 1 tablespoon oil for 2 minutes. Add patis and chicken. Saute for 10 minutes or until the chicken is slightly brown.

2.) Add peppercorn and pineapple syrup. Cover and simmer for 15 minutes.

McDonald's Coupons

I had McDonald's spaghetti and sundae delivered yesterday. I like ordering from them because they don't have a minimum charge. So even if you only buy one food item, you can do so. But they do have a P40 delivery charge. Anyhow, my orders came with their annual coupons where you can get as much as a P50-discount. The coupons are valid for dine-in, take-out, drive-thru, and McDelivery. You only get to use 1 coupon per transaction. Customers can really save a lot. Imagine having 2 pieces of chicken and a regular Coke for only P95! The promo runs from January 1 to March 15, 2013 so there's plenty of time to avail of these coupons.

Merienda Time at Burgoo

I needed some pampering so my nephew and I headed off to Headway Salon at SM MOA yesterday to have my nails done and eyebrows threaded. After that we decided to have merienda at Burgoo. I remember eating there with my friends last year and I didn't like the food. But since we were only having merienda, I gave it another shot. This time I liked everything we ordered. I must admit that all the food are pricey but they're delicious so it's money well spent. We had Mississippi Mud Pie, Black and White Choco Cheesecake, Strawberry Cheesecake, Cheddar Cheese Fries, and Carbonara.

There were a few diners so we were able to fully enjoy our meal (I hate crowded restaurants). The servers were really nice and accomodating too. I'll definitely dine at Burgoo again.

Pepperidge Farm Goldfish Baked Snack Crackers

We went grocery shopping yesterday at S & R Paranaque branch and my sister bought this yummy crackers called Pepperidge Farm Goldfish Baked Snack Crackers (Cheddar flavor). Not only are they delicious, they look so cute too. Once you start eating, you don't want to stop anymore. I promise to buy more when we go grocery shopping again.

Hearty Merienda at the UCC Cafe Terrace

I went yesterday to Newport Mall with my nephew for a much needed time away from work. I had my nails done first at the Fab Salon and then we had merienda at UCC Cafe Terrace. It was my first time to dine at that branch of UCC so I was kinda excited. Sure thing because all the food we ordered were yummy. My nephew had a Tiramisu Cake and we all shared the big servings of Chicken Teriyaki and Eggplant Sandwich, Sausage and Bacon Pizza Toast, and Fudge Brownie Sundae. They have a lot of dishes in their menu so I'd love to come back for more.

No, Thank You: KFC Mac and Cheese Bites

I didn't want to eat fish that my sister was cooking so I opted to have some food delivered. I wanted to eat a Taco Salad from Wendy's but after the CSR told me that the minimum order should be worth P1,000, I immediately said "no, thank you" and said goodbye. Can you just believe that?! Ridiculous, right? So instead I ordered from KFC (I had Chicken Ala King, Chicken Salad, and KFC Mac and Cheese Bites). This is the first time I had the KFC Mac and Cheese Bites, 5 bite-sized treats with a crunchy outside and a center filled with soft macaroni and creamy cheese. I unfortunately didn't like it. The taste was too strong for me. The mix of flavors was overpowering and it was salty. It's what you call in Tagalog "nakaka umay". I actually got to eat only 1. But that's just my opinion so you guys are free to try it for yourselves. People have different preferences when it comes to taste anyway. :)
